Oxygen, moisture drawn from the food, and sustained high heat break the oil down into a growing mix of compounds — free fatty acids, oxidation products, polymers, and small amounts of trans fats that were not present when the oil was fresh. That familiar heavy, slightly rancid smell in a tired fryer is not incidental. It is the oil announcing that it has changed.
Food regulators around the world track this degradation with a measure called Total Polar Compounds, or TPC — essentially, the proportion of the oil that has broken down from its original state. Many jurisdictions set a legal ceiling, commonly somewhere in the region of 24 to 27 percent, above which frying oil is considered spent and must be discarded. A well-run potato kitchen is, whether it frames it this way or not, quietly managing a slow chemical clock.

Here is where the choice of oil starts to matter enormously, and where it connects directly to how long that clock runs.
Not all oils degrade at the same speed. The difference comes down to their fatty-acid make-up. Oils rich in polyunsaturated fats — the group that includes standard sunflower, and to a degree soybean and corn — have chemical structures that oxidise relatively quickly under heat. Oils rich in monounsaturated fat, also known as Omega-9, are considerably more stable. High-oleic oils, canola, and olive oil all sit in this steadier camp. A more stable oil simply holds its integrity for longer at frying temperature before it crosses that TPC threshold.
For a potato kitchen, this is not an abstraction. A more stable oil means fewer oil changes, more consistent results batch after batch, and a fried potato that tastes of potato rather than of stale oil. There is a cost dimension, too: an oil that stays usable for longer can reduce how often it has to be replaced. The size of that saving depends entirely on volumes, frying loads, and filtration practice — so it is worth measuring in your own operation rather than assuming a headline figure — but the principle is sound, and for a high-throughput fryer it is far from a trivial line on the P&L.

Diets higher in monounsaturated fats are generally viewed favourably in nutritional research relative to some alternatives, and there is broad agreement that repeatedly degraded, heavily oxidised frying oil is not something anyone wants more of in their diet. Choosing a more stable oil and retiring it before it is spent is, at minimum, a sensible default.
It is worth being clear about what this is not. No single ingredient swap will transform public health, and any claim that it might should be met with scepticism. But "a more stable oil, changed on time" is a modest, defensible position that a serious kitchen can stand fully behind — which is more than can be said for most claims made about cooking fats.

And retire oil before it crosses the line rather than after, both for the sake of the food and for the sake of the people eating it.
The potato has earned its place as one of the most versatile and beloved foods on earth, and most of the time we meet it, it has passed through hot oil to get to us. It seems only right, then, that the oil should be part of the conversation — not an afterthought, but an ingredient in its own right. A good potato deserves a good oil. In the end, the two decisions are really one.
